GO! Pasta project addresses the challenges of gastronomic heritage of Upper Friuli and Goriška regions, especially the heritage of filled pasta, such as cjarsons from Upper Friuli, Idrijski žlikrofi from Idrija, Bovški krafi from Bovec and Kobariški štruklji from Kobarid. Despite their uniqueness, traditional filled pasta from the regions is facing several challenges – regarding their promotion and wider recognition, sustainability, and involvement of young people in their development.
One of the main outcomes of this project is also the purchase of the GO! Pasta food trailer. Its first debut was at the Idrija Žlikrofi Festival, a key cultural event in Idrija (Slovenia), celebrating local culinary heritage of filled pasta. The trailer is now available for rent to the local producers of žlikrofi and cjarsons, allowing them to showcase their products at various events or markets. Additionally, the trailer is serving as a mobile platform to promote both the project and the European Capital of Culture, amplifying the region's rich cultural and gastronomic traditions.
Although the project deals with heritage, it is innovative and open to the future. It recognizes the past, understands the present, and builds a common future – with a plate of filled pasta. Dober tek! Buon Appetito! Bon pitic!
